Lemon Chicken Recipe

I have been making this chicken for at least 4 years. To me, it's easy, it tastes good with almost any type of side, and it doesn't require any oil. Winner, winner, chicken dinner.
Lemon Chicken
Ingredients:
2 lbs Chicken Breast
1/4 C Lemon Juice
1/4 C Apple Cider Vinegar
Italian Seasoning
Poultry Seasoning
Garlic Powder
Minced Onion
Salt
Pepper

Directions:
Set chicken out for 10-20 min prior to starting
Heat oven to 425 degrees F
Line glass dish with foil (helps with cleaning afterwards)
Spread chicken out evenly
Add lemon juice and apple cider vinegar
Add seasonings
Cook for 25 minutes
A few things to note:

Setting out the chicken to get close to room temperature is KEY. It allows the chicken to better soak up the marinade and it doesn't turn out dry. Of course, don't set it out for too long and make yourself sick!
I always cut my chicken up into inch-size pieces just because it is easy to meal prep with afterwards. If you use larger pieces, you may need to cook your chicken longer.
I also don't know how much of each seasoning I use because I just "eyeball" it all. Basically, I just season until the chicken is evenly covered.
Once done, I just pair the chicken with whatever sides I want! I actually prefer to eat the chicken cold, but it's fine re-heated as well.
